This is such an easy pasta to make but has a lot of flavors, it is garlicky and spicy but still creamy and fresh. I wanted to make a spicy vodka rigatoni but I never have vodka at home so I made something similar but without the vodka, heavy cream, and cheese.

Instead of the heavy cream, I used a vegan heavy cream and that worked perfectly. I recommend the silk heavy whipping cream but there’s a lot of vegan creams out there. Here are some creams that work great for a vegan substitute:

For the pasta I used Rigatoni but if you wanna use a different kind of pasta you can do that too. If you’re looking for a gluten-free pasta I would recommend the Banza Chickpea Pasta. And because they’re made out of chickpea they also have a lot fewer carbs!:)

Ingredients

  • Kosher salt
  • 4 garlic cloves
  • 2 Tbsp xtra-virgin olive oil
  • ½  tsp rushed red pepper flakes
  • ¾ cup heavy cream
  • 1 lb 1 lb. rigatoni
  • Basil Leaves
  • 10-20 cherry tomatoes

Instructions

  • Fill a pot with water and heat over high.Salt the water and bring to a boil while youre do ingthe other prep.
  • Peel the garlic and shop into fine pieces
  • Heat the olive pil in a pan and add the garlic anf the crushed red pepper flakes
  • add the tomaotes to the pan and let cook anf press them dwon a little to make it saucy
  • Add the cream
  • cook the pasta until almot done and add to the sauce with some of the pasta water
  • Stir togehter and add basil, salt and peppar
